Today I have started the Salad Challenge on this site. Each day (for Lunch), I will be eating a salad. Ideally a different salad a day in order to branch out, but there's probably going to be lots of repeats!



Salad #1: Basic Grocery Store Caesar Salad.

Day 2: "Leafy Jennifer Aniston Salad". It's a nice base,the only tweaks I made was swapping Chickpeas for normal black beans.

Basic Recipe:
-Chickpeas (beans of any kind) drained
-Diced cucumber
-Handful of fresh mint
-Handful of fresh Parsley
-Chopped red onion (more is less!!!)
-Quinoa
-Water/stock (to cook the Quinoa in)
-Honey
-Lemon Juice
-Salt/pepper
-Olive Oil
-Pistachios
-Feta Cheese
-Added Leafy greens (half spinach half arugula mix)

-Lettuce

-Ranch

It wasn't much, considering my options but still good.

Day 5: Revised Jennifer Anniston Salad
-Lettuce
-Feta Cheese
-Cucumber
-Pistachios
-Honey
-Salt/Pepper
-Olive Oil
-Quinoa
-Beans

I learned that even though it called for purple onion, the one I picked out was wayyy to strong and caused incredible onion breath during my day. So I opted it out.

I love this salad but there are so many variations.

Asian Salad:
  • Shredded cabbage mix
  • Slivered Almonds
  • Green onions
  • Sugar snap peas
  • Mandarin oranges
  • Crispy noodles
Dressing:
  • sesame oil, rice vinegar, honey, lime juice, ginger, salt, and pepper

I eat salads a lot, today using a food processor sliced a skinny long cucumber, some onion and tomato, used a plant base mayo which is also great for adding to mashed avocado and use that on toast, the lemon in the mayo stops the mashed avocado going brown.

My fav go to salad which I eat many days a week is made out of:

Arugula
Cherry Tomatoes halves
Half an Avocado sliced
Goat cheese crumbled
tbsp. of ground flax seed
extra virgin olive oil
balsamic vinegar
pink salt
with some crushed walnuts or pecans
