A few questions about creating a healthy weekly meal plan

Firstly, I know the general useful advice is eat a wide variety of natural foods (fruits, vegetables, meat, fish, nuts, etc.) and you're good to go. But I'm a data nerd. So I'd like to know the following:

Is there any way I can easily find/calculate Recommended daily values for myself as opposed to the average?

Is there an app that lets me meal prep for the week with recipes and then checks to make sure I'm hitting all my targets?

Realistically, does it matter? I've eaten unhealthy most of my life (processed frozen meals and fast food) and with proper protein supplementation and exercise I've always felt fine.

I can only give you my personal opinion to your last question.
Nutrition matters in so so many ways! You are "fine" now, but how about full of energy, in a constant good mood with no stiffness or muscle pain? That is what good Nutrition can do to and for you.
Junk foods and that includes processed food and not just candy and chips can really screw things up in your body and can cause so serious inflammation.
That leads to lower performance. If like me you are heading into a auto immune disorder or have a family history of such, you could push back the outbreak of it for years.
No one is saying you have to give it all up indefinitely. Not sustainable nowadays. Just, you know, limit it.

Realistically, does it matter?
Can you articulate a measurable goal that you have in mind? E.g. lose 10 pounds. Without that, sustainable changes tend to be elusive in my experience. Improving a diet almost always involves sacrifice, since the food industry is so rife with flavourful, convenient options :)
