Now I am very curious about the scientific insight on the baseline difficulty of balancing on a single leg, to be quite honest.

They always come in pairs. Meaning, 100 high knees are 50 high knees per left leg, and 50 high knees per right leg, totalling at 100. That's true for all exercises when not specifically mentioned otherwise. Read the manual, and all will become clear and might answer a couple of other questions...

@Damer the problem is that the printing resolution of the PDFs and images are all wrong. The page size of a PDF is 79 x 111 mm, which is too small for A4. If you scale it up to print as A4, it gets blurry. The resolution for the current images is 300 dpi, so if you scale it up to A4, it gets to...
