Made potato pancakes for breakfast, this time added an egg plus spinach. The spinach and onion I chopped an then hand blender with the egg.

When I make mashed potatoes I'll give the spuds a real good mashing then add grated cheddar cheese and mash that in.

Real good on shepherds pie is add cheddar on top and bake some more.

I made homemade gnocchi today. Good way to use up a bunch of potatoes all at once and meal prep for the week.
